Steak Restaurant Brighton
Wood & Bone is a wood-fired steak restaurant near Brighton — about ten minutes inland, at 4 Tabbita Street, Moorabbin. Sher Wagyu, porterhouse and scotch fillet over timber, a twelve-hour smokehouse, and free off-street parking.
What ten minutes inland saves you
Brighton eats well and pays for the privilege. Church Street and Bay Street carry some genuinely good restaurants, and they also carry a postcode premium that everyone acknowledges and nobody enjoys.
Ten minutes inland the same quality of beef costs less, because the rent does. Sher Wagyu is Sher Wagyu regardless of which suburb it is served in, and a wood-fired grill does not become more effective the closer it gets to the bay.
The parking, which is the other thing
Anyone who has tried to park near Church Street on a Friday evening knows the specific ritual involved — two laps, a metered space eight minutes away, and a return trip to top it up halfway through the main course.
Here parking is free, off-street and directly outside the door. No meters, no time limits, no walking back in the rain. It is a small thing that changes the shape of an evening more than it should.
Getting here, and a note about the train
By car it is a straightforward run inland — roughly ten minutes depending on which end of Brighton you start from and how the Nepean Highway lights behave.
Worth knowing: Brighton sits on the Sandringham line, which does not run through Moorabbin. There is no direct train. If you would rather not drive, a short taxi or rideshare is the sensible option — and the fare inland is considerably less than the equivalent trip into the city.
What is on the fire
The grill burns actual timber rather than gas. Porterhouse with the fat cap left on and rendered over flame, scotch fillet for marbling at a lower price, eye fillet for tenderness, and Sher Wagyu — the Victorian full-blood producer whose beef turns up on a good number of Melbourne's best-of lists.
Cuts and weights shift with what the supplier has that week, which is deliberate. A printed menu that never changes forces a kitchen to serve the worse ingredient for the sake of consistency.
Alongside it a smoker running low and slow — brisket in the night before, out around twelve hours later, plus ribs, smoked lamb and duck. Finite amounts, and on a Saturday the brisket can be finished by nine.
The room, honestly described
It is a warm restaurant room with exposed brick and dark timber, not a bayside dining room with white linen and a view. If the view is the point of the evening, Brighton has better options and we would say so.
If the food is the point, this is the trade: no water, better beef, cheaper bill, easier parking. A fair number of Brighton regulars made that trade some time ago.
What to order if it is your first time
Porterhouse, medium-rare, no sauce for the first few bites — taste what the fire did before covering it. Share a smokehouse board across the table while you wait, because it arrives faster than the steaks and gives everyone something to argue about.
If you are ordering wagyu, take less than instinct suggests. The marbling means a modest portion eats considerably larger, and the people who order the biggest wagyu on the menu are reliably the ones who leave a third of it.
Functions for Brighton
Sunday, Monday and Tuesday the restaurant closes to the public and is available exclusively. For a Brighton milestone birthday or engagement, a function venue ten minutes away where you get the entire room — rather than a partitioned section of a working restaurant — is a materially different proposition.
Groups from around twenty up to full capacity, with menus built around the group rather than chosen from a tier. Free parking for every guest, which for a function of fifty is worth more than most people calculate.
You get the room to yourself, which means your own music, your own run sheet and no second sitting waiting for the table. Cake is welcome and we will cut it when you want it rather than when it suits the kitchen.
